When it comes to eating fish, everyone has their unique taste. Some prefer groupers, others tunas. Some like filleted big fish, others like them small and deep fried. What most Greeks (and Europeans) agree on though, is the supreme taste of a charcoal-grilled Labrax (European Sea Bass). Labrax come to the shores of Greece from December until March in order to lay its eggs, making that period the best for its hunt. Even though one can find the fish all day by the shore, the best time to hunt them is either early in the morning or late in the afternoon. Their hunt requires smaller sized spearguns (75cm-90cm), with thin shafts (6.25mm-6.5mm) and one rubber band.
